Grace Chow, Vice President of Food & Beverage
Grace Chow began her hospitality career in Tacoma, Washington, being a native of the Puget Sound area. She started her career in hotels, managing a small property in her hometown before moving to Los Angeles where she worked at sbe Entertainment as the Corporate Trainer. She was promoted to the Director of Food & Beverage openings, leading restaurant development projects.

David Spero, Executive Chef
David Spero is the Executive Chef of Hard Rock Hotel & Casino Atlantic City, managing culinary operations at the popular entertainment destination for over two years. In his role, Chef Spero oversees operations of over 15 dining outlets including the iconic Hard Rock Cafe, the Italian restaurant Il Mulino, the Japanese restaurant Kuro, Council Oak Steaks & Seafood, Fresh Harvest Buffet, Fish & Co., Sandpiper, and more.

Thaddeus DuBois, Executive Pastry Chef
Thaddeus DuBois joined Hard Rock Hotel & Casino Atlantic City in February 2020 as the Executive Pastry Chef. In his role, he oversees and directs the baking and pastry department with 25 team members servicing the hotel’s many restaurants, two player clubs, high volume banquets, in-room-dining and special event functions.

Quincy Logan, Executive Chef at Council Oaks Steaks & Seafood
Born from a long lineage of successful culinary enthusiasts, Chef Logan began his career working at an upscale steakhouse in Philadelphia while earning a degree in culinary arts from Atlantic Cape Community College. Chef Logan quickly moved along the ranks to Sous Chef eventually being on the opening team of several new restaurants for the franchise.

Shingo Inoue, Executive Sushi Chef at Kuro
Born in Osaka Japan, Chef Inoue holds more than 40 years of experience at some of the best Sushi restaurants around the world including Australia, Hawaii, California, and Florida. He has been with Hard Rock Atlantic City since its opening in 2018. Chef Inoue loves to travel and became a sushi chef in part because it would allow him to see the world.

John Zaitoun, Executive Chef at Sandpiper
Executive Chef John Zaitoun is a recently returned New Jersey native. He discovered his love and respect for the culinary arts at a young age working at his parent’s diner in Northfield, New Jersey. Chef Zaitoun attended culinary school at Atlantic Cape Community College, and after completing the program in 2012, he joined Fuze Restaurant in Avalon, New Jersey.
